pie crust empanadas

  • ​3 Tbsp of butter/oil
  • 1 white onion, diced
  • 2-3 Tbsp. minced garlic
  • Salt and pepper
  • 2 tsp. smoked paprika
  • 1 Tbsp. dried oregano
  • 2-3 tsp. ground cumin
  • 1 lb. ground beef
  • 2 store-bought pie crusts
  • 1 whisked egg

  1. Sauté onions & garlic in oil/butter over medium heat until soft and fragrant.
  2. Season with salt, pepper, smoked paprika, oregano, & cumin.
  3. Add in ground beef and cook.
  4. Roll out pie crusts and use a (6-inch circular) cookie cutter/glass/bowl to cut out circles of empanada dough. Put filling on the middle of each dough circle.
  5. Fold the dough circles in half and press the edges shut with a fork.
  6. Brush tops with egg wash, and bake at at 375°F until golden on top, about 15 minutes.
